{Recipes}: Chocolate Chip Cookie Bottomed Vanilla Cupcakes

After making a batch of the sinfully delish chocolate chip cookie, double stuff oreo, and brownie bars I was on the search for another crazy dessert concoction. I discovered these chocolate chip cookie cupcakes and knew I had to try it out! I was worried the cookie part would be really hard but these came up nice and chewy. One cupcake probably will send you into a sugar coma but it is well worth it! I really was blown away by the butter cream recipe though and will be using it next time I make champagne cupcakes. These would be great for a birthday or for a lunch with friends like mine was!

Chocolate Chip Bottomed Vanilla Cupcakes and Vanilla Butter Cream Frosting from How Sweet It Is

Cookie Dough

  • 1/2 cup butter, softened
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/3 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chocolate chips

Preheat oven to 350 degrees. Sift flour, soda, salt and set aside. Beat butter and sugar until light and fluffy. Add egg and vanilla and mix until combined. Add dry ingredients and mix. Fold in chocolate chips. Line muffin pans with tin foil cupcake liners and lightly spray with cooking oil. Fill each liner with about 1 1/2 tablespoons of dough and press in.

Extra dough can be used to make mini cookies as decorations. Make teaspoon size balls on a cookie sheet and bake at 350 degrees from about 6 minutes. Watch closely as they can burn easily.

Cupcake Batter

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/3 cup milk

Cream butter and sugar for about 3 minutes. Add eggs and vanilla and mix until combined. Sift flour and baking powder together and set aside. Add half of the dry ingredients and mix. Add milk and mix and then add remaining dry until combined. Drop batter on top of dough in liners. Bake 15 to 18 minutes. Turn them half way through baking time. Remove and let cool completely before frosting.

Vanilla Butter Cream-This frosting would go really well on top of the champagne cupcakes!

  • 2 sticks of butter, softened
  • 2 1/2 cups powdered sugar, sifted
  • 1 tablespoon vanilla

Cream butter until smooth. Add sifted powdered sugar slowly, increasing the speed as you go. Add vanilla and beat 2 to 3 minutes until light and fluffy. Frost and add sprinkles and half mini cookies on top!

Let the sugar rush begin!

  1. I still haven’t made the champagne cupcakes yet and with my diet, I may not be able to eat these right now. I’ll just have to save the recipe and make these as a reward when I hit my weight goal!
