{Recipes}: Lemon Cream Cheese Champagne Cupcakes

This is a birthday week!!! Today is my good friend Kelly C.’s birthday today! Happy Birthday Kelly! You are admired by so many people for your kindness, humor, and strength!

And for your love of things citrus! Two years ago Kelly and I had a joint birthday party and made 100 cupcakes. Our favorite was the lemon ones so for her special day I’m sharing a recipe for her birthday cupcakes this year!

I’ll be using the base of the champagne cupcakes from my birthday with the following recipe for a lemon cream cheese frosting.

Lemon Cream Cheese Frosting adapted from Kraft Recipes

Ingredients

  • 1 16 oz package of powdered sugar, shifted
  • 1 8 oz package of cream cheese, softened
  • 1/2 stick of butter, softened
  • 2-3 teaspoons lemon extract

Beat sugar, cream cheese, butter, and extract with mixer until well blended. Makes about 3 cups of frosting.
